Blueberry cheesecake
Blueberry cheesecake
Cheesecake Filling:
16 oz cream cheese
1/3 cup ricotta or sour cream
1/2 tsp vanilla
1/2 tsp lemon juice
1 egg + 1 egg yolk
2 tsp Sweet'n Low for baking
Cheesecake Filling:

Blend cheeses until smooth and well combined. Add other ingredients and
beat until smooth. Pour into your favorite (pre-cooked) crust (I used a
coconut macaroon crust this time...gonna try a almond crust next time)
and bake in a water bath at 350 degrees for 35-40 minutes, or until
firm.

2 c shredded coconut
3 egg whites
1 tbs coconut flour
1/2-1 tsp Sweet'n Low or Stevia (depending on how sweet you want it)

Ingredients:
1 pound boneless, skinless chicken breasts about 2 large breasts
2 tablespoons of olive oil
3 teaspoons of onion powder
2 teaspoons of garlic powder
3 teaspoons of chili powder
2 teaspoons of cumin
1 teaspoon of kosher salt and freshly ground pepper to taste
3 cups of low-sodium chicken broth
1 15 oz can of diced tomatoes, drained
1 14 oz can of black beans, drained and rinsed
2 3/4 cups of instant whole grain brown rice
½ cup shredded colby jack cheese (optional)

Turn slow cooker to high and stir in instant rice and black beans.
Let cook 30-45 minutes on high, or until rice is tender.
Add chicken back in, cook for 20 minutes on high, or until chicken is warm.
Serve with fresh diced tomatoes, sour cream, green onions, avocados or guacamole, top with cheese.
